Here’s What’s Fresh This Fall

The Agrihood harvest is in full swing, and the bounty, spectacular. Right now, residents can still gather fresh herbs, vibrant kale, hearty chard, collard greens, mixed greens, okra, and an impressive pepper collection, including cayenne, jalapeño, bell peppers, Padrón peppers, banana peppers, and Mad Hatter peppers. Coming soon are the juicy tomatoes and always comforting sweet potatoes.
These farm-fresh ingredients are ideal for creating cozy fall meals. Try whipping up jalapeño cheddar cornbread to accompany Sunday supper, or embrace southern tradition with bold and smoky collard greens that simmer low and slow. This Fall, Carnes Crossroads brought the pumpkin patch experience home. Families wandered through rows of orange beauties, helping little ones select the perfect pumpkin for carving or decorating. It was an easy, relaxed way for residents to mark the season and enjoy a familiar Fall tradition close to home.

Featured Recipe: Southern-Style Collard Greens

Ingredients:
- 12 hickory-smoked bacon slices, finely chopped
- 2 medium-sized sweet onions, finely chopped
- 3/4 lb. smoked ham, chopped
- 6 garlic cloves, finely chopped
- 3 (32-oz.) containers chicken broth
- 3 lbs. fresh collard greens
- 1/3 cup apple cider vinegar
- 1 Tbsp. sugar
- 1 tsp. table salt
- 3/4 tsp. pepper
Instructions:
- Cook bacon over medium heat in a 10-qt. stockpot for 10 to 12 minutes or until almost crisp.
- Add onion to the stockpot and sauté for 8 minutes.
- Add garlic and ham and sauté 1 minute.
- Stir in broth, collard greens, apple cider vinegar, sugar, salt, and pepper. Reduce the heat to medium-low and cook 2 hours or until the desired degree of tenderness.
